I almost broke my phone drooling over this picture when I saw it on Pinterest a few months ago. It was literally screaming my name. Luckily I had a baby shower to throw coming up and so this went straight to the top of the menu. IT DID NOT FAIL. I think I got more compliments on this cake than any other cake I've ever made in my life. It was easy and unbelievably delish-if you like chocolate mint, then this is the perfect cake for you!

Three of my Favorite things to do: cook, eat, and look for new recipes to try! I grew up with a mother that was a great cook and have loved carrying that tradition over into my own home. This is a compilation of recipes that I've tried and liked, where I found them, how I made them, and what I think about them. Cooking is, for me, an expression of love. Enjoy!

Pumpkin Bread
Since my mom isn't here to make her pumpkin bread this winter, I searched high and low for a good recipe. I wanted moist and flavorful, and as healthy as possible. I stumbled on this recipe, and halfway through throwing ingredients in the mixing bowl, I realized it was vegan. It also had less oil than all of the other recipes I had looked at. Fingers crossed, and it turned out amazing! Incredibly moist and tons of flavor. A keeper for sure.
*We did muffin tins, makes about 20 muffins and I baked at recommended temp for about 18 min

Andes Mint Chocolate Cake
Birthday cake at its best!!!
If I have to make my own birthday cake, you bet your bottom I'm gonna cover it in Andes mint frosting, chocolate ganache, and Fudge mint oreos.
*I used a Devil's food cake mix and mixed in crushed oreos
*I used Fudge mint oreos because they are amazing
*the frosting was a bit too sugary for my taste, but I also royally suck at making frosting
*I would definitely make this again!!!

Buttermilk Chocolate Cake
It's called AMAZING Buttermilk Chocolate Cake, and it IS!
This recipe fully stood up to its name. Pretty easy to put together, extremely moist yet light, it's an all around great chocolate cake if you're looking to make something NOT out of a box. The instructions were spot on, very thorough, so no surprises, which is always a plus.
In looking around for the perfect fluffy and light frosting, I chose this one.
The only thing I'd try different next time is in choosing my cocoa powder. I've heard Dutch cocoas are delicious and the Hershey's I used left me wanting a little something more...
