Ham and potato soup

I had this soup at my sister-in-laws house.  She must have a magic touch because I've tried to make it about 5 times and although it is easy and delicious, I still haven't been able to make it quite as good as she did.  I'm gonna keep trying though!  It's basic, foolproof, hearty, and comforting. 
*Notes: I use Yukon gold potatoes for a creamier texture in the soup.  Also, the more flavorful the ham is, the more flavor the soup has.  Once I used store bought ham, not so great.  I usually wait to make this when I have leftover spiral ham.

Sausage, kale, and potato soup

This soup has been all over the internet for years, but I've never been apt to try it.  A few months ago I had it at a friend's house for dinner, and I almost died.  Absolutely delicious, in fact I would venture to say it is one of the best soups I've ever had.  Full of flavor and easier than easy.  Very filling.  And my favorite part: the kale.  I love the way it softens but doesn't melt.  It's hearty and warming and fabulous.  Can't believe it took me so long to try it.

Broccoli Chowder

Soup Season!  Well sort of.  Around here it's more of a crank-up-your-AC-and-pretend-it's-fall season.  I've been labeled a Soup Snob by some of my friends, and it's totally true.  This recipe is fast, easy, healthy, and yummy.  A keeper for sure.  
*You could add any number of things to this soup to add a little more depth: more potatoes, mash some of them, I added a dollop of cream cheese, but a sharper cheese in addition would be awesome, chopped ham, just to name a few.  This soup was great on its own, but can stand up to some more flavors as well.

Roasted Cauliflower Soup

Oh.  My.  Goodness.  Words can not describe how DELICIOUS this soup is.  Easy, healthy, yummy, so so so so good.  This is the best cauliflower soup recipe I've made yet.  My only beef is with the color.  It looks very...beige.  Blah.  Barfy.  But the taste is out of this world, and it's easy too!  I LOVED the little roasted specks of flavor.  Yummmm--my entire family devoured it, even my 1 and 3 year olds!

Creamy Cauliflower Soup

Love this soup.  So easy, so delicious, and so healthy.  Enough said!  The mustard croutons take it to the next level.  I serve it with these on the side and ooooh la la!
