I love me some Chicken Cordon Bleu! Sometimes it can be a lot of hassle, though. This recipe is super easy to assemble and the flavor is delicious! No pan frying or unusual ingredients. It doesn't even necessarily need the sauce. The chicken stays moist and everyone gobbled it up.

Three of my Favorite things to do: cook, eat, and look for new recipes to try! I grew up with a mother that was a great cook and have loved carrying that tradition over into my own home. This is a compilation of recipes that I've tried and liked, where I found them, how I made them, and what I think about them. Cooking is, for me, an expression of love. Enjoy!

Cinnamon Roll Casserole
This recipe looked so promising...almost there! A little mushy/raw in the middle, but I'm thinking another try with the oven's convection bake on might do the trick. But smelled fabulous and looked gorgeous! An easy crowd pleaser

Asparagus Tuna Casserole
I was waiting for the dentist, flipping through a magazine when I came across this recipe.
My mom always made tuna casserole on the nights that we were staying home with a babysitter. If I ever saw one on the counter my first question was, "Where are YOU going???" I'm guessing it was her go-to dish because it was about 5 staple ingredients in one dish.
I was excited to find a healthier yet almost equally as simple recipe.
A few things I would change: I liked the asparagus but I think I prefer peas. They add a needed sweetness. I left out the potatoes and added more pasta and nixed the olives. I was worried the sauce would be too bland but it ended up being perfect. And a few handfuls of crushed up Jalapeno Kettle Chips never hurt anyone either :)

Chicken Cordon Bleu Casserole
This recipe is total comfort food that no one can resist. It was delicious! I made it for my entire family when we went away to a cabin last April and people were eating leftovers for dessert and then again for breakfast...

Christmas Morning Casserole
Mmmmm. I'm remembering Christmas morning all over again! I was tired of the same old hashbrown and sausage casserole, so when I found this I was totally excited to try it out. It's more of a savory bread pudding, and it was awesome! The bacon and ham were the perfect texture addition. Next time I think I might add some potatoes, not quite sure how, but for my hate of all things soggy there was just a little bit too much soggy bread in the middle and I think some potatoes would firm it up a bit. I was worried about soaking it overnight (yes I have serious food texture issues), but it work out perfectly. It was actually a breeze to put together on Christmas Eve and made the house smell lovely while we were busy ripping open presents.
*Note: I used Trader Joe's Cheddar&Gruyere mix instead
